Wildflower Honey

We source our honey from one specific beekeeper in Vysočina, Mr. Dvořák, whose hives sit at the edge of a meadow full of clover and wildflowers. The honey is raw and unpasteurized, so it keeps its aroma and everything else that makes honey from a beekeeper worth buying instead of one off a shelf. The flavor is full, with a gentle bitterness on the finish. Spread it on bread, stir it into tea or yogurt, just do not add it to boiling water, heat takes away from its quality. Store it somewhere dry and dark; any crystallization is normal and does not change the taste at all.
