Sourdough Bread

This bread is baked every morning at the bakery around the corner, using a starter they have been feeding for years, which gives it its own character and a mild tang. The dough contains only flour, water, salt and time, no yeast and no improvers. The crust is properly crackling, the crumb soft and full of holes. Order by noon and it arrives the same day, still warm from the back of the delivery box. Keep it in a cloth bag on the counter, it stays fresh for a few days and afterward makes excellent toast or bread dumplings.
